Life in my little world is Tickety Boo, lots has been happening.......... I have lots to share and my ideas are overflowing.
I have recently left my job as a Teaching Assistant at the local school where my children attend, only to be given the opportunity to start another position in September at another prominent school. Its a new challenge and a new chapter of my life, just what I need right now, to help me move beyond my comfort zone and into a new and exciting phase of my life.
Last week I dined at a local restaurant called Uno Momento in Stokesley. It is a beautiful Italian restaurant and cafe in a lovely Georgian village. There I ordered a delicious starter called Bruchetta and My Oh My it was very delicious. So much, so that I decided to replicate it at home.
Ingredients:
300g Piccolo Tomatoes.
2 small Red Onions.
1 Yellow Pepper.
1 Large Baguette.
Balsamic Vinegar.
Extra Virgin Olive Oil.
Method:
Heat a frying pan and cut the baguette into thick slices. Drizzle the cut ends of the baguette with extra virgin olive oil and place them into the hot pan. Allow the ends to crisp and then turn over and do the same with the other side.
Next, very finely chop all of the tomato, red onion and yellow pepper and mix gently together. Once the baguette ends are crispy lay them onto a serving platter and spoon over some of the tomato mixture.
Finally add a dash of balsamic dressing over the plated bruchetta and enjoy. This makes a beautiful summer afternoon snack or even a light lunch paired with a small glass of wine in the sunshine Xx.
